Creating a simple bar for a snack on the go is simple!
This is a delicious recipe that a dear friend introduced me to. So I didn’t invent it, I’m just passing it on as its very easy to make and quite filling as snacks or on the go for training.
Remember to allow to cool completely before cutting into bar size.
Bananas don’t have to be all over black/brown if like me they don’t last long in your home. Mostly brown but not too fresh as they’re harder to mash. And most ingredients can be replaced by other seeds, nuts or grains but in the same proportions.
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup sesame seeds
2/3 cup almonds, chopped
1 cup dried cranberries or raisins
1 tsp ground cinnamon or ginger
1 cup quinoa flakes (or oats)
1 cup of puffed quinoa or puffed brown rice
4 tablespoons of honey, rice malt or maple syrup.
3 over ripe bananas, mashed
Mix together all the dry ingredients in a large mixing bowl.
Stir in wet ingredients to combine.
Spread mixture into a lined slice tin or baking tray and bake for 12min at 180 degreesC
Pull tray out and carefully score the mixture using a knife, into the bar size you want.
Bake for a further 15min or until the bars are browned on top.
Allow bars to cool completely before cutting, wrapping.
